How to Make a California Roll

Ten steps for your delicious sushi making adventure

Step 1: Prepare the Sushi Rice.
  • Rinse 1 cup of sushi rice thoroughly until the water runs clear.
  • Cook the rice according to the package instructions or in a rice cooker.
  • While the rice is still hot, season it with sushi vinegar (rice vinegar mixed with sugar and salt). Mix gently and let it cool to room temperature.
2. Prepare the Ingredients:
  • Slice the avocado into thin strips.
  • Cut the cucumber into thin matchsticks.
  • If you're using fresh crab meat, shred it into small pieces. If using imitation crab sticks, cut them into thin strips.
3. Assemble Your Rolling Station:
  • Lay a bamboo sushi rolling mat on a clean, flat surface.
  • Place a sheet of plastic wrap over the bamboo mat.
4. Prepare the Nori and Rice:
  • Place a sheet of nori on the plastic wrap-covered bamboo mat, shiny side down.
  • Wet your fingers with water to prevent the rice from sticking, and then take a handful of sushi rice and spread it evenly over the nori, leaving about half an inch of nori uncovered at the top.
5. Add the Fillings:
  • Lay the avocado, cucumber, and crab meat (or imitation crab) strips in the center of the rice.
6. Roll the Sushi:
  • Carefully lift the edge of the bamboo mat closest to you and begin rolling the nori and rice over the fillings.
  • Apply gentle pressure to shape the roll as you go.
  • When you reach the exposed nori at the top, wet it slightly with water and then complete the roll.
7. Shape and Slice:
  • Use the bamboo mat to shape the roll into a tight cylinder.
  • Wet a sharp knife and slice the roll into bite-sized pieces, wiping the knife clean between cuts for clean edges.
8. Serve and Enjoy:
  • Arrange the California roll pieces on a plate.
  • Serve with soy sauce, wasabi, and pickled ginger on the side.
  • Sprinkle toasted sesame seeds on top for extra flavor if desired.
9. Presentation:
  • You can garnish your plate with extra avocado slices, cucumber, or pickled ginger for a visually appealing presentation.
10. Optional Variations:
  • Get creative and add your own twist to the California roll by incorporating ingredients like spicy mayo, tobiko (fish roe), or tempura-fried ingredients for added texture and flavor.
